Quickies: Morning, Noon & Night Challenge Round-up

A big heartfelt thank you on behalf of Denise and myself to all of our blogger friends that supported us during this endeavor.  The response was awesome.  Countless wonderful creations highlighting avocado & feta cheese.

If you did not have a chance to get involved, I am happy to report that we will be doing this again!  Just have to brainstorm with the talented Denise on another great challenge.

A big thank you to my friend Natasha, the talented 5 star foodie, for inspiring me with her wonderful 5 Star Foodie Makeover!

When I conceived of this idea it was mostly to highlight a wonderful cookbook from a creative and innovative cook.  Please get yourself a copy of Denise's book.  It is truly a gem and would make a magnificent addition to your food library.

I originally thought these two items would make a cool dessert...so I made one!  I was not able to enter in the contest, but I will post my avocado & feta dessert on this coming Lazaro Actually Cooks Saturday.

Quickies Cooking Challenge Round-up

Since this is vegetarian Tuesday, here's a quick dish I made over the weekend.  It is as flavorsome as it is indulgent.

Beech Mushrooms,  Heirloom  Tomatoes &  Yukon Gold Mash

  4. Oh Laz! If you only knew how much I love beech mushrooms!! And there's that gorgeous Yukon Gold potato again! A gorgeous dish that I know will just pop with flavour.

    Thank you for all your assistance and encouragement throughout the challenge. It was a fantastic experience and one I truly would never have endeavoured, if not for you!

  5. Marvelous round-up on Denise's blog! I was clicking away for quite a while. Looking forward to reading your avocado & feta dessert recipe.

    (The heat is unreal, isn't it? Was 90 here at 10 AM this morning! I expect it in Aug and Sept but not June. Oh well, we had a cool winter. Now we pay.)

  16. Ooh, that dish looks so enticing, Lazaro. I don't think I've ever had beach mushrooms. They look pretty though, and I love my fungi so...

  18. I just saw the winner on Denise's blog, what a great unusual dessert! Must have been hard to pick a winner with all the great entries you got! I love all mushrooms and beech mushrooms with their long stems are particulary flavorful, that is definitely a beautiful composition. You definitely know how to talk to me with that vegetarian dish, I would eat this in a few seconds, funny you made potatoes, I made potatoes too today but crushed :o) simplement délicieux!
