Braised Pork Grilled Cheese Sandwich

Welcome to Piggy Delight Tuesday

Braising is my absolute favorite cooking method.  Long hours of cooking develop the kind of incredible flavor amalgamations that set the palate alight.  Pork butt was made for braising.  Want to know my idea of culinary nirvana?  That's a big hunk of pork relaxing in a bath of Gewurztraminer wine, tomatoes, aromatics, and spices, slowly roasting in a hot oven. 

Long slow cooking in the presence of moisture breaks down or dissolves collagen by turning it into gelatin and water.  Once the connective tissue, collagen, is broken; this happens to the pork butt.



Brasing Liquid - Gewurztraminer wine, tomato paste, red onion, Yukon gold potatoes, portobello mushrooms, water, spices.  Melt in the mouth tender.

Colombian Bread
Taleggio Cheese
Pickled Red Onions
Braised Pork Butt
Basil Chiffonade

  8. That is a striking sandwich - visually and flavourwise. Gewurztraminer is one of my favourite white wines, and Taleggio is just wonderful! Actually, I wouldn't mind a glass of Gewurztraminer to go with this beauty....

  18. Now that's one sexy looking grilled cheese sandwich Lazaro! I'm not a big pork eater but believe me, I'd gobble that down in no time. DROOL! And I'd have to agree with you about braising, it definitely brings out the flavors. Time consuming but so worth it!

  22. Not THAT's a sandwich! Sandwiches get so much flack but they can be incredibly awesome. Funny, I was thinking of pulled pork sandwiches for lunch with my parents on Saturday.
