Bacon Wrapped Chicken Thigh with Chicken, Apple & Sage Sausage
Chicken thigh for me is without a doubt the best part of the bird. Meat is quite moist and flavor is at it's peak.
Wrapping it in bacon, apart from adding flavor, allows for the rendering bacon fat to keep our chicken thigh moist through the cooking process.
My chicken sausage was made with chicken, apple, sage, parsley, chives and seasonings.
I served the dish with a simple red onion and herb salad. Balsamic and Spanish olive oil round out the flavor profile.
Here's the final look...
This course was a winner. Visually, I find it striking. Flavor profile was on point. I was one happy cook.
Luckily, none of my guests told me to..."Stuff It."
